Susan Beth Substad

Susan Beth Substad (57) passed away Friday, April 12th in her home surrounded by her loving family after a courageous fight with pancreatic cancer. Susie was born to Robert and Barb Mathis on September 16, 1966 in Park Ridge, Illinois. She graduated from Glenbrook South High School in 1984, and went on to study Education at Bethel College in St. Paul, MN. There, she met the love of her life Jay Substad. Jay and Susie married in 1987 and built their life on a foundation of loving and serving Christ. They welcomed four beautiful children into their family--Allison, Bethany, Trent and Burk. Their family loved spending time together playing games, camping, taking trips with family and friends and sharing about their hope in Jesus. Jay, Susie and their four children spent 2 years living in various villages in Honduras ministering to people and sharing the gospel. Honduras remained a special place to the entire Substad family. After returning from Honduras, they continued to raise their family in Lakeville, MN sharing lots of special memories with family and friends over the years. Susie was a beloved mom, wife, sister, daughter, friend, teacher and more. She invested in the lives of her classroom students over the years and embodied what it means to live selflessly and serve. She loved Michigan sunsets, ice cream, garage sales, playing games, being together with her family and most recently relished the title of "Grammie" to Jay, Emma, Weston and Cooper. After losing her husband Jay in 2014, she continued to lead and love her family with quiet grace and strength, always looking to serve others, not pitying herself. Until her last breath, she reflected Jesus by the way she lived each day. She lived out the words she spoke in her last days of "trust & surrender". Susie was preceded in death by her husband Jay, and her mother Barb. She is survived by her children Allison (Grant) Mitchell, Bethany (Andrew) O'Reilly, Trent (Anna) Substad, Burk Substad and grandchildren, Jay, Weston, Cooper and Emma; her father Bob Mathis, sister Karen (Dave) Palmquist, brother David (Mimi) Mathis and several nieces, nephews and great nieces and nephews. A Celebration of Life Service will be held on Thursday, April 18 at Berean Baptist Church in Burnsville, MN.
