Jack Cooper

Cooper, Jack Townsend Jr. Jack Townsend Cooper, Jr., in Faith, went to live with his Lord on March 23, 2012. 90 years young. Jack spent his last year as a resident at Southview Acres Nursing Home in West Saint Paul, MN. Born on May 5, 1921 in Burkburnett, TX to Jack Townsend Cooper, Sr. and Lona Louella Cooper, Jack was the oldest of five children, brothers: Doyle and Bill, sisters Shirley and Lou. Jack enlisted in the Navy in 1941 and achieved the rank of Aviation Chief Petty Officer in 4 and a-half years. Upon leaving the Navy, Jack was encouraged by a Navy buddy to visit Minnesota and meet an acquaintance of his at a Valentine's Day dance. There, he met Betty Jane Lacy and they married a year later on February 14, 1947. Over the next several years. Jack and BeeJay moved across the Midwest, managing Red Owl grocery stores. They settled down in Shorewood, MN and opened Terrace Kitchens Catering in Tonka Bay, MN with the help of BeeJay's father, Russell Lacy. Working countless hours, they catered many, many occasions for some of the most famous Lake Minnetonka families, including Mr. and Mrs. Hubert H. Humphrey. Sensing the growth of the tiny village, Jack successfully ran for mayor. During his tenure, he enlisted the help of several key council members and then VP, Walter Mondale of MN to secure a federal grant for sanitary sewer for the village of Shorewood. A faithful member of Trinity Episcopal Church in Excelsior, MN, he served as Senior Warden for several terms. He served as chairman on the building committee and was instrumental in running a successful pledge campaign that built the current sanctuary. Upon the death of his mother-in-law, Jack and Betty Jane donated the altar cross in memory of Betty Jane's father, mother and stepmother. Jack worked in the food service industry including grocery, catering, and food brokerage. He represented several major manufacturers, including Simplot and Smuckers and finished his career as President of Lacy-Walker Food Brokerage in Minneapolis, MN. Jack is survived by his loving wife of 65 years, Betty Jane Cooper, Bloomington, MN; only son and daughter-in- law, Fredrick and Carla Cooper, Lakeville, MN, granddaughter, Lacy Cooper and great-grandson, Kolten Kienholz-Cooper; granddaughter, PFC Anne Cooper, McGuire AFB, NJ; brother, Bill Cooper and wife Jean, Cave Junction, OR; sisters, Shirley Saunders and husband, Bill, Dallas, TX and Lou Fife and husband, Rick, Phoenix, AZ. Preceded in death by parents, Jack Townsend Cooper, Sr. and Lona Louella Cooper and brother, Doyle Cooper.
